Just received this cookbook and found it very appealing. The photography is first class, recipes are well written and easy to follow. Some of the terminology may require re-reading to get the instructions clearly.I do not like to bake my tagine, but found the methods described in this book easily convertible to stove-top tagine cooking (the tagine, although on low heat and on diffuser, heats up pretty well and generates sufficient heat and steam to thoroughly cook meats, vegetables, etc. If you have experience with and cook other ethnic cuisine, Moroccan cuisine should be a breeze to enjoy.
This is a misleading book for those who want to cook traditional tagine in a tagine pot in the oven. All the tagines recipes in this book are stove-top cook method in a casserole dish. I kept looking for the oven temperature and cooking time in the recipes and didn't find them. Then realized that the "easy" part of the the title is because it really isn't traditional tagine cooking at all. Useless cookbook for me.
I am new to this kind of cooking and am finding it an adventure. The recipes are wonderful and the best part that they typically are slow cooked. Once over low heat, you can pretty much step away until almost ready to serve. There is no standing over a stove stirring, basting or turning. The meal cooks itself.
Versatile recipes and beautiful pictures. I get inspired every time I look through it and have tried many recipes from this book. Great for the tagine beginner.
